Moromi Chicken Wings

Do you love chicken wings? Here’s a great way to enjoy them!

Marinate chicken wings in shio koji in the fridge over night - about 24 hours.

Preheat oven to 400F

Drizzle oil oil over a cookie sheet and place the wings out in one layer. Sprinkle with coarse black pepper.

Put the wings in the oven on a center rack and reduce the heat to 350F.

Set the timer for 30 minutes.

While the wings are cooking, make the tare in a small sauce pan over medium heat.

For 6 - 12 wings, heat 2 T each of @moromishoyu soy sauce, rice vinegar, brown sugar, and 1 T Moromi Fermented Cayenne Hot sauce over medium heat until boiling. Reduce slightly until the sugar is incorporated and the sauce thickens to coat a spoon. Turn off the heat and set aside.

Check the wings for doneness - 170F.

Turn the oven to high broil to brown the wings for about 4 - 6 minutes.

Remove the wings from the oven and plate.

Drizzle with the soy sauce tare and serve.
