Did you know that tamari means puddle in Japanese? Whenever we make shiro miso, a small puddle of this golden nectar forms on top of the miso as it ferments for three months. We carefully harvest the tamari from each batch and then filter, pasteurize and bottle. After making over 3,000 lbs of shiro miso, we release a very special reserve white miso tamari.
