Fall Salad of Bitter Greens, Fresh Figs, and Toasted Pine Nuts with Moromi - Balsamic Dressing

Ingredients: (Serves 2)

Mix of spicy lettuces, arugula, mustards, pea shoots, baby kale or whatever is fresh and beautiful

10 fresh figs, alternatively a mix of citrus would be an excellent substitute.

1/4 C pine nuts, toasted

3 tbsp good quality balsamic vinegar

1 tbsp Moromi Shoyu

1 tsp whole grain mustard

1/2 C extra virgin olive oil

Pinch of salt

Couple cracks of fresh pepper

Preparation:

Put greens, figs and toasted pine nuts in a large bowl.

Place the rest of the ingredients in a small jar with a lid, shake vigorously and pie over sals. Crack a bit more pepper and a good pinch of flaky salt over top, toss and share.
