Foraged Maitake Mushroom Toast!
Serves Two
Recipe:
Find a friend or two who forage mushrooms like @brandi_ontherocks_ @cheffydlight
Clean and separate one good clump of mushrooms, about 1/2 lb, and set aside.
Find another friend who bakes amazing rye porridge bread like @dvacca10
Heat a couple tablespoons of olive oil in a sauté pan on high heat and sear off a couple thin slices of that delicious bread. Set aside on a plate.
In the same pan, add a couple more tablespoons of @capizzanooliveoils olive oil and toss in the cleaned mushrooms. Sear the mushrooms over high heat until slightly wilted and just starting to brown. Reduce heat. Splash in a tablespoon of white wine vinegar and a tablespoon of @moromishoyu. Toss until the mushrooms are well coated. Remove from heat.
Plate a slice of the seared bread and top with 1/2 the sautéed mushrooms. Drizzle with @moromishoyu Chili Moromi Sauce and garnish with sliced green onion and pickled cayenne pepper slices. Plate the other one for your friend or eat them both, I won’t judge you.
