Koda Farms Rice Congee, Moromi Shiro Miso, lemon and ginger

Serves Two 

Ingredients:

  • 1 C Koda Farms medium grain rice

  • 8 C Water

  • Two 2 inch pieces lemon peel

  • Juice of 1/2 lemon

  • Two thick slices ginger, peeled 

  • Two whole garlic cloves 

  • Salt to taste

  • 2 tablespoons black pepper

  • 3 Tbsp Moromi Shiro miso

Preparation:

Combine rice, water, lemon peel, ginger and salt to taste in a small saucepan. Bring to a simmer and cook for approximately 1/2hr until rice breaks down and becomes thick, stirring frequently. You can always adjust consistency with a little water if it becomes too thick. Season with salt.
To serve divide into two bowls, too with lots of freshly cracked pepper, chives, a little more salt, a squeeze of lemon and a dollop of Moromi Miso.
